Fish & Meat: Carrot and Gin Cured Salmon
Every trip I make to Hong Kong is a new culinary adventure. This time was especially unique because I had the chance to try every restaurant from the restaurant group, Maximal Concepts.
My best friend, whom I call Leina but really I just call her “sis,” has been in my life practically since birth (my father delivered her). She works at Maximal- talk about a cool job- and gave me the best culinary tour a girl could ever ask for. Each day was filled with new mouthwatering and gorgeously prepared plates of food, beautifully designed spaces, and excellent service.
STIR
I had the pleasure of dining at Fish & Meat, which brings your dining experience back to basics with fresh farm-to-table cuisine that’s bursting with color and vibrancy in every dish. We ordered the Carrot & gin cured salmon, Hand-ground veal and pork meatballs, and the O’Conner Farm grass-fed beef tartare. To drink we had the Homemade Sicilian Lemonade with Blueberry Jam & Thyme, which was so pretty and refreshing!
Everything we ordered was on point. The meatballs were especially juicy and tender. The Carrot & gin cured salmon had such fantastic color and presentation. It’s not everyday you see cured salmon and carrot together- both tasted bright and fresh in this dish. The combination of flavors with the creaminess of the pumpkin ginger puree, the tartness of the greek yogurt, the crunch of the carrot, and the saltiness of the salmon were balanced perfectly in every bite.
STYLE
I paired this intensely orange dish with this lively silky crêpe de Chine slipdress by CeCe (on sale now). This dress is more structured than I’m used to, but it still flows and shows your silhouette when you move. The straps and tie in the back with a v-neckline in the front and back give the dress sharp angles to balance out its otherwise straight fit.
Leina and I bought these bracelets together in an alley street vendor in Central for about $1 a pop (you can find a similar one here). They’re super cool because you can twist it into whatever shape or design you want and wear it as a bracelet, armband, or necklace!
If you’re ever in Hong Kong, be sure to check out Fish & Meat and/or any of the other Maximal Concept spots- Mott 32 for upscale Chinese Food (get the Iberico cha siu, suckling pig, and quail egg shui mai), Blue Butcher for steak and a fantastic brunch buffet spread (with an all you can eat foie gras station), Stockton for a speakeasy experience with great drinks, Brickhouse for Mexican food (get the jalapeno Diablo cocktail), Limewood for BBQ and seafood in Repulse Bay (get the housemade churros with the to-die-for caramel sauce), Double D for burgers, and Play for a night out. You won’t be disappointed!
